Down Home Cooking

White Bean soup ( I kind of just made this up as I went and it turned out really good)

wash and soak overnight
2 cups of white beans

dice two slices of bacon into a large pot or dutch oven,
rinse and drain your beans and add to pot
cover with water
add salt and pepper to taste

cook 2 - 3 hours or until almost done

Add diced carrots and two cups chicken stock and a can of diced tomatoes
Bring to a boil and cook 10 minutes

While that is boiling
dice a slab of ham into cubes and fry in a tiny bit of oil with a half a chopped onion and 1 stalk of diced celery
dump the ham, onions, and celery into the pot with the beans

add a cup of small pasta (elbows or shells or whatever)

cook 10 more minutes and move off the heat.

Now that is comfort food.
