Levi and I cooking together on Sunday nights is fast becoming a tradition. He wants to learn more about cooking and I am more than willing to help. It's fun to work with him and the food is good too.

Last night I prepared Tilapia fish fillets in a lemon pepper (lemon juice, black pepper, red pepper flakes, salt, and a hint of garlic)marinade. I'd never eaten Tilapia; it was all they had at our little local meat market. It is really good, light, sweet and very mild. By far my favorite fish I've ever fixed.
Levi did shrimp kabobs in a glaze he concocted and did the grilling.
I also cooked corn on the cob and new potatoes.

It turned out really good.

I just flat forgot to make the cucumber dill sauce... could have kicked myself.

I can't get in the mood to do anything for the 4th. Levi asked me what we were going to do and I told them to just go ahead and plan on spending the day with Christi's family because I don't think we are going to do anything out of the ordinary.

For the last several years I have hosted a huge 4th of July party with tons of food and drinks and fireworks. Have had as many as 30 people out here and spent hundreds of dollars on fireworks.

Just not in the mood this year.

So, what are you guys going to do to celebrate?

I like Tilapia, but Grouper or Scrod are great too.

I got us a room in Downtown Seattle for the 4th. We are going to spend the day at the aquarium (they have a new exhibit, a humungous underwater dome) and just putzing around downtown. Then we are going to watch the fireworks display that they do every year.

They shoot fireworks off of the Space Needle. We have seen it on TV a zillion times, but never in person. Hopefully we will get some killer photos!

I love Tilapia. I'm fast becoming a salmon fan too. I didn't like it for the longest time, but it's growing on me. :)

We like Salmon now but have not tried much else. CV needs to be here to cook it! She is a great cook too! Johns brother and family are coming to town tomorrow afternoon. We will go watch fire works near the mall. After I take my Mom to the airport EARLY Thursday, we are going to the beach on the gulf coast , about an hour away. It is on Anna Marie Island.

Schwans has a fresh caught salmon with a mesquite seasoning that is really good. From what I understand salmon is the best fish for you, has more omega 3 oils than other fish. We also like their blue hake.
My all time favorite is still good ol' Oklahoma bass or crappie, breaded and deep fried.

I like the catfish with the jalapeno Jelly.

Have you ever gone to Wild's restaurant? It's somewhere in the greater OKC/Yukon/El Reno area. Great place.

I love their food, but one of their attempts to be quaint on the menu makes me kind of sick

The combo plate : "Something from every corner of the pasture, and the pond too!"
