I stumbled upon a new recipe today. Every once in a while I get a huge craving for beans... and I like all kinds. I put on a small pan of navy beans to cook to have tomorrow with macaroni and tomatoes but that didn't satisfy today's craving.

I had a can of organic black beans in the pantry... think, think, think.
Oh,yeah, I remember reading an recipe on Our Lady's web site recently with black beans and corn and salsa. Thought I would try that. I drained the can of black beans and a can of whole kernel corn, added a little salt and got out the salsa - then I remembered that I still had some New York style salsa that one of our vendors sent us a Christmas time (boy, did we give him a hard time about salsa from New York). It is sweeter than we like, being the Pace Picante people that we are, but, I remember thinking that it might be good with beans and 'shure nuf... I mixed in about a half cup of salsa with the black beans and corn and it is yummmmmy.

Do you eat it with chips or just plain?

I just ate it plain but I think it would be good served as a side dish with a grilled chicken breast.

That is one of my favorite dishes. As a vegetarian, I have all kinds of great bean recipes. Maybe I'll post some.

sounds super yum! I love black beans. They are about the only beans I like.
